The House of JC Le Roux is the first cellar devoted solely to the production of sparkling wine in South Africa.
Employing the most advanced techniques, a wide selection of sparkling and Méthode Cape Classique wines are produced which includes the South African favourites Le Domaine, La Chanson and Sauvignon Blanc.
The creation of a Cap Classique
Only sparkling wine made in the Champagne region of France may be called Champagne.
South African sparkling wines made in the traditional French method (methode champenoise) are referred to as Methode Cap Classiques or MCC’s.
Wine that has been impregnated with CO2 bubbles is simply termed sparkling wine whereas MCC’s undergo a second fermentation in the bottle to create the sought after bubbles.
The tasting is an informative session where a host gives you the background of the wine of JC Le Roux and the flavours that you should be able to taste.
The cellar tour starts with a short video clip highlighting the history of champagne / sparkling wine and the techniques used to make it.
A highlight of the tour is the opening of a bottle of bubbly with a French sabre. This is called Sabrage.
